Why not make some old fashioned chicken broth this Winter and give your health and immunity a boost?
Bone broth provides important minerals such as calcium, magnesium, phosphorus and many other vitamins and trace elements that are not only abundant from the chicken bones and vegetables but easy to assimilate into our bodies. The gelatine from the bones provides us with an amino acid Glycine which helps to keep our cartilage healthy and is thought to help to promote good digestion and sleep. Chicken broth is also considered useful in boosting immunity, helps reduce the symptoms of the common cold, pain and inflammation and eases joint pain. It also helps detoxification systems and organs in the body and also contributes to glowing, healthy skin.
• 1 large onion
• 1 leek
• 1 tbsp olive oil
• 1 large carrot
• 750ml homemade chicken stock (use bones with chicken on it)
• 120g savoy cabbage (optional)
• 300g leftover cooked chicken
• 130g pearl barley (optional)
Chop the carrot, onion and leek into slices and cook in olive oil for 6 minutes or so.
Add the chicken stock. Simmer and add the pearl barley. Cover and simmer for 35 minutes.
Put pieces of the left over chicken into the broth along with the cabbage (shredded). Simmer for 5 minutes until the chicken is piping hot and then enjoy!
